Lisa and Dani, a server, are preparing flowers for the restaurant. One thing I love about Lisa’s places is the fact that she always has fresh flowers! And she does her own arrangements, which I would never be able to do. Jax arrives to pick up his check & reminds Lisa that the group is going out of town for the night. First, he is going to apologize to Stassi’s mother for his behavior. He hopes to get in good with her family so he can win her back. Tom & Kristen are also going on the trip. This is not a trip I would want to go on – it seems like it’ll be a bunch of fighting couples.
The group is gathering at Katie’s for the trip. Stassi tells us that her parents & divorced. She usually visits her mom, brother & sister monthly. She’s bringing the whole crew with her this time. Tom is excited because his band is opening for an 80’s band. Tom immediately begins describing a fight that he had with Kristen about how much time he spends with his band. They begin arguing in the car. Stassi interjects & takes Kristen’s side. Katie says that she’s hit her limit with the two of them & she doesn’t understand how Kristen continues to stay so unhappy. I don’t either. We’re only three episodes in & I’m over them.
They immediately hit the beach at lake Arrowhead. The girls ask Jax to take his shirt off so they can see his tattoo. He still hasn’t told Stassi that he had her signature tattooed on his arm. Jax isn’t sure if she’ll love it or hate it. He says that, based on their recent date (which ended horribly), she could go either way. I’m thinking that she’ll be appalled. She is speechless when she sees it. They just had a huge fight & she told him about her feelings for Frank. Tom points out that Jax is lucky she doesn’t want a restraining order. Stassi tells the girls that it makes her soften toward him a little. She hopes that he can reconcile with her family.
They arrive at Stassi’s mom’s house. She moved to Lake Arrowhead after losing her home in Hurricane Katrina. Jax says that he’s nervous about seeing Stassi’s mother, Dayna. Dayna welcomes all of the girls & is friendly to Jax. She is surprised that Jax had the balls to come. Stassi tells her about the tattoo & Dayna is shocked. Dayna asks why he would do that. She wonders if Stassi has done anything to lead him to believe they can reconcile. She tells her mother that she told him to move on at dinner, but she then allowed him to come on the trip. Stassi is definitely sending out mixed signals. She is loving the attention.
Back at Sur, Lisa & Nathalie meet with a wine dealer to make some changes to the menu. Lisa is old fashioned & screw-top wine makes her nervous. The first wine is a rose, which Lisa loves. Peter loves the cabernet. Lisa agrees to add two of the four wines.
At Lake Arrowhead, the group is having dinner. Dayna is ready to go out for the night. She sends everyone to get ready & asks Jax to stay for a talk. They begin with a shot of tequila to take the nerves off. Dayna asks for an explanation of how Jax hurt her daughter. I like Dayna, she’s very direct. She’s also very angry at the way Jax treated Stassi. She tells Jax that Stassi was planning to marry him. He admits to cheating on Stassi. Dayna points out that Stassi believed that Jax was ‘the one’ & he betrayed her. She asks what he’s doing now. He says that he’s trying to get his life together, to which Dayna rolls her eyes & has more tequila. He says that he loves her, but can’t give a real reason. He can’t look Dayna in the face while he’s talking. She agrees to tolerate him for the night & that they will work from there.
Peter mentions to Lisa that Scheana’s injuries are beginning to get on the nerves of the other staff. The staff believes that Lisa is babying her & that Scheana is exaggerating. Lisa doesn’t want to get involved in the staff drama. Peter agrees to step in as needed.
The Lake Arrowhead group is at a restaurant, having margaritas. Tom says that it’s obvious that Stassi & her mother are very much alike. Kristen is annoyed with everything Tom does. When he mentions a pair of glasses, she cattily points out that he just got them but is acting like he wears them all of the time. Actually, he never said that he wore them. Just not necessary to put down or belittle your significant other like that. She’s been drinking & isn’t making much sense. Everyone seems uncomfortable.
Jax & Tom go to the bar, where Jax tells Tom that a person can only take so much belittling. It’s getting embarrassing. Stassi tells the girls that Kristen & Tom argue constantly. Even though Tom cheated on Kristen, Stassi kind of feels sorry for him because this is his big weekend. Kristen wants their relationship to be a priority. Katie points out that this has been going on for a year & Kristen should leave him. Kristen says that it isn’t that simple.
Tom attempts to say goodnight to Kristen, but she won’t let him touch her. Kristen retreats to the girl’s home & Tom tries to talk to Kristen. Katie jumps in the middle. They kick Tom out of the room. Jax tells Tom that they should have broken up a year ago. That advice, coming from a man who won’t let go of Stassi, is laughable.
In the morning, Stassi & her mom are discussing how awkward everything is. Dayna tells Stassi that Jax is trying to win her back. She asks how many mistakes Jax is allowed to make. Stassi still has feelings for him, but doesn’t want to get hurt again. Dayna tells her that it’s been a year, she needs to make a decision. Jax is playing video games with Stassi’s 8-yr-old brother. He brings up that he knows Jax cheated on Stassi. He suggests that Jax talk to Stassi & promise not to be mean anymore. Jax could learn a lot from this kid.
Lisa arrives at Sur. Kristina is covering for Scheana because something is wrong with her eye. She points out that Scheana is always hurt. Lisa tells Kristina not to cover for her if she’s frustrated. Kristina says that she doesn’t dislike Scheana, but that she doesn’t always like the things that she says or does.
Peter & Other Tom arrive at Lake Arrowhead. Other Tom asks about the previous night & Kristen tells Tom to apologize. He says that he doesn’t want to get into what happened & isn’t apologizing. In 2 seconds, Kristen makes the lunch very uncomfortable for everyone. Tom says that he was hurt because he tried to tell her goodnight & she pushed him away. He tells Katie that he’s sorry that she was caught in their drama. He gets very upset & says that he’s tired of the fighting. This is what Kristen has wanted – Tom tearing up at lunch with his friends? Stassi & Jax talk about his tattoo. She likes it, but says that he’ll get rid of it when he gets mad at her. Her mom is right, she needs to make a decision ASAP & stop leading Jax on.
Scheana arrives at Sur wearing huge glasses. Lisa wants to talk to her about the shifts that have been covered. Scheana says that her contact scratched her eye & she had to go the doctor. Lisa points out that her eyes look fine. Lisa tells her to stop playing the victim. Scheana says that she doesn’t like being hurt, but it’s pretty clear that she loves the attention it gives her. Lisa points out that the girls already have an issue & that Scheana needs to stop giving them ammunition.
Tom’s band is ready to play! The entire group is there to support him. Kristen seems to genuinely enjoy seeing Tom on stage. She says that times like this remind her of why she loves him. She says that she wouldn’t trade her relationship for anyone else’s. Tom joins the group after his performance. Kristen gives me a big hug & kiss. Stassi sees them in the same place years from now, still fighting. Kristen says that Tom is really trying, for the first time in a long time. She begins to realize that he’s actually sorry for cheating.
Back at the house, Stassi & Jax go downstairs to talk. She remembers all of the trips that they have taken together. Stassi says that it’s weird to have him there again. She is making the effort to give him a chance with her family. Dayna is still upset. Jax says that he needs verification from Stassi, like a hug. She says that he’s needy. Stassi seems to enjoy Jax begging for a kiss, which she gives him. She says that it feels nice to be back there with him.
I think Stassi is on Bethenny today – if you want to see more of her. She and Jax were on WWHL this week. They were annoying. Stassi sat with her shoulder to Jax (literally giving him the cold shoulder) and said we’d have to watch the rest of the season to understand why. Is she in middle school? NMD
Top Chef New Orleans (S11E8) “Piggin’ Out” by BB
The chefs walk into the kitchen and see musical icon Dr. John. For the quickfire challenge, they will be making Dr. John’s favorite condiment, hot sauce. I know people who put hot sauce on everything, and I mean everything. Don’t know why they want to cover the flavor of food with hot sauce, but to each his/her own.
Dr. John tells them in a gravelly voice “I know y’all gonna do a hip maneuver. I can dig that flava and hiptang to it. If it has flavanosity of the highest order and it has tangnocity that mixes in, killer sauce. I hit it, can’t quit it.” They have 45 minutes to prepare and bottle the perfect hot sauce. The winner will get immunity in the elimination challenge. Some of the chefs are making Caribbean sauce, some are making Mexican sauce, and some are making Asian sauce.
After Dr. John measures each sauce by its hip tanginess and off the hookness, he announces his least favorite sauces, which belonged to Nicholas, Carrie, and Nina. He liked the hot sauces made by Brian, Justin and Carlos. The winner is Brian. This is his second immunity in a row.
The elimination challenge: Toby Rodriguez (Artist/Butcher/Chef) and guest judge Chef Donald Link come into the kitchen with a cart containing a whole pig. They will be doing a boucherie (sp), where the community comes together to break the pig down and splitting off to prepare different food items. The chefs will have to butcher the 300 lb. hog together. There will be 250 guests at the dinner. They must use the whole hog. They will be attending supper that evening to see how a boucherie (sp) works.
They all get together over the hog and decide what portion they want and how to butcher it. None of the chefs seem squeamish about breaking down the hog. Sara is bossing everyone around but not really helping them butcher. Nina and Nicholas split the head of the pig. Justin and Carlos are both doing tacos and there is some competitive talk between them about who will be making the best Mexican tacos.
The next day the chefs arrive at the Bayou Barn to find all kinds of outdoor cooking equipment. Some of the chefs are familiar with the equipment and some aren’t. They have 2 hours to prepare their meals. Justin gets mad when he spends a long time building a fire on his grill and then everyone starts using it. Stephanie sees an alligator on the other side of the bamboo fence and freaks out a little, but then has to forget about him to finish her dish. With 30 minutes left, Justin’s grill flames up and overcooks his pork.
It’s time to eat and Nina’s dish tastes flat, so she quickly adds some cayenne pepper. Here are the dishes served by the chefs: Brian (Porchetta with oyster mushrooms); Sara (pork dim sum); Justin (Wood roasted pork breast taco); Carlos (pozole verde with fried chorizo taco); Shirley (Jiaozi dumpling); Louis (slow grilled pork leg with spring onions); Stephanie (pork brodo with braised pork belly); Travis (Cajun-style pork ramen); Carrie (crispy trotters); Nicholas (Tete de cochon with summer beans); and Nina (braised pig’s head ragu). As Tom says, this is going to be a tough one judging wise.
While the chefs watch, the judges discuss the dishes. Tom thought it was one of the best meals in 11 seasons. The judges loved Shirley’s, Nina’s, Brian’s, and Carlos’ dishes. They thought Justin’s meat was a little dry. He totally disagrees. Tom didn’t like Louis’ corn and his popcorn was unnecessary. They also didn’t like Travis or Stephanie’s dishes.
Padma comes in a gets Nina, Shirley and Carlos. Shirley tells the judges about being at her grandma’s house in China and making dumplings. Carlos was also inspired by his mom’s cooking in making his pozole. Nina tells them it was exciting for her to use a part of the pig along with the others. The winner by a slim, narrow margin is Carlos.
Next come the bottom chefs for this week; Justin, Louis and Stephanie. Justin tells them he’s surprised to be standing there. Tom and Hugh liked Justin’s, but Padma and the guest judge got dry pieces of pork. Something was missing from Stephanie’s dish. Louis tried to do too much with the popcorn. He had too many ideas going on and didn’t “treasure” the pig according to Hugh. The guest judge hated the popcorn. Padma tells Louis to pack his knives and go.
Last Chance Kitchen: This was more of a commercial for the Toyota Corolla than anything else. Janine and Louis are given $25 and 15 minutes to shop at a fresh market. When they get back, Tom tells them they must choose only three ingredients from their shopping bags and make their dish in 20 minutes. Janine makes a catfish dish and Louis makes a prawn (shrimp) dish. Louis wins and Janine is crushed because the competition is over for her.
